Turtle Fudge- chocolate oatmeal no-bake cookies

This recipe was always a family favorite growing up. Having a family of six, my parents always doubled the recipe, though they still didn't seem to last long.  I grew up calling these cookies turtle fudge. They are delicious and easy to make. Best part is there's no baking involved!!

My Grandmother recently gave me No Bake Cookies, Bars & Pies. An awesome cookbook with over 100 fast and east no-bake recipes. She knows that I love baking with my girls, so this was the perfect little token to surprise us with. We've tired a few of the recipes, but now I feel challenged to try more. So, I decided some of the recipes I post about will be from this book. That way I can enjoy making treats with my girls and my Grandma will know that we got good use out of the book!!

The Original 'Turtle Fudge'
2 C. Sugar
3 T. Cocoa powder
1/2 C. Margarine (I buy sweet cream butter)
1/2 C. Milk
Pinch of salt
3 C. Old-fashioned rolled oats (I use regular quick oats)
1/2 C. Peanut butter
1 tsp. Vanilla

I think his recipe might be slightly different than the one I grew up with, but the outcome is the same.... DELICIOUS and no where near healthy!!! Anyway, back to the directions...

In large saucepan, bring sugar, cocoa powder, margarine, milk and salt to a rapid boil for 1 minute, stirring frequently to avoid burning. Add oats, peanut butter and vanilla. Mix well and remove from heat. Working quickly, drop spoonful's onto waxed paper and let cool. Enjoy!
Makes about 4 dozen.
